300gram fresh or frozen peas
1tspolive oil
1medium onion, finely chopped
2garlic cloves, minced
1/2tspsalt
1/4tspblack pepper
1tspdried thyme
1/4cupvegetable stock or water
1/2lemon juice
A little chopped parsley
Instructions
If using fresh peas, wash and shell them. For frozen peas, let them thaw slightly before cooking. Heat olive oil in a medium skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent, then add the minced garlic and continue to stir for another minute. Add peas, salt, pepper, and thyme to the skillet and stir for 2-3 minutes. Pour the vegetable stock or water over the mixture, reduce the heat to low, cover the skillet, and let it cook for 5 minutes until the peas are tender.
