Ingredients

  • 300 gram fresh or frozen peas
  • 1 tsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried thyme
  • 1/4 cup vegetable stock or water
  • 1/2 lemon juice
  • A little chopped parsley

Instructions

  • If using fresh peas, wash and shell them. For frozen peas, let them thaw slightly before cooking. Heat olive oil in a medium skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent, then add the minced garlic and continue to stir for another minute.
    Add peas, salt, pepper, and thyme to the skillet and stir for 2-3 minutes. Pour the vegetable stock or water over the mixture, reduce the heat to low, cover the skillet, and let it cook for 5 minutes until the peas are tender. Remove the skillet from heat, add the lemon juice, and stir well. Garnish with chopped parsley and serve hot.
